Pumpkin Spice Oatmeal Crumble Muffins

  1. Preheat oven to 350 F.
  2. Grease muffin pan with olive oil.
  3. In a large bowl, stir together flours, chia, coconut sugar, baking powder, baking soda, salt and pumpkin pie spice.
  4. Add the lemon juice, egg, pumpkin puree, oil and milk.
  5. Whisk to combine.
  6. In a separate bowl combine crumble topping.
  7. Spoon the batter into muffin tin and top with crumbles.
  8. Bake for 12-15 minutes.
