Meatballs With Mushroom Sauce
- 10 slices bacon
- 2 lb. ground beef
- 1 c. finely chopped onions
- 2 Tbsp. butter
- 1/2 c. bread crumbs
- 1 crushed garlic clove
- 2 eggs
- salt
- pepper
- 1/2 tsp. dried oregano
- 1 lb. mushrooms, sliced
- 2 1/2 c. canned mushroom soup
- 1 c. red wine
- Cook the bacon in a large skillet until brown and crisp. Remove and drain on paper towels, reserving the fat from the bacon. Put the ground beef in a large mixing bowl.
- Cook the chopped onions in the butter until they are soft but not brown.
- Remove the onions and add them to the beef.
- Lightly brown the bread crumbs and crushed garlic in the pan used for the onions, adding a little more butter if needed.
- Put the bread in with the beef and onions. Add the eggs, salt, pepper and oregano.
- Mix the ingredients well until they are thoroughly blended.
