Irish Soda Bread

  1. Sift flour, sugar, salt and baking powder into mixing bowl. Stir in caraway seed.
  2. Cut in margarine until mixture looks like coarse meal.
  3. Add raisins.
  4. Combine buttermilk, 1 egg and baking soda; stir into flour mixture to moisten dry ingredients.
  5. Turn onto floured board; knead lightly for 3 minutes.
  6. Shape into ball; place in greased 2-quart casserole.
  7. With a sharp knife, cut a 4-inch cross about 1/2-inch deep in center of bread.
  8. Brush with beaten egg yolk.
  9. Bake in a 375u0b0 oven for 1 hour, or until done. (Cake tester inserted in center comes out clean.)
  10. Cool in casserole for 10 minutes before removing to wire rack.
  11. Yields 1 bread.
