Stuffed Bass
- 1 (3 to 4 lb.) bass fillet or several small fillets
- 1/4 cup butter
- 1/2 cup finely chopped onion
- 1 green onion
- 1/2 cup finely chopped celery
- 2 cups dry bread crumbs
- 2 cups moistened bread
- 1 egg, beaten
- 1 tsp. garlic salt
- 1/8 tsp. pepper
- 1 small bell pepper
- 1 lemon
- 2 tsp. Worcestershire sauce
- Dry fish and sprinkle with garlic salt and pepper.
- Place fish in a well-greased baking dish.
- Melt butter in an iron skillet and saute onion and celery.
- Remove from heat; add bread crumbs, bread, egg and seasonings.
- Add 2 tablespoons white wine Worcestershire sauce if dry.
- Mix thoroughly.
- Stuff center of fish with bread stuffing.
- Brush with melted butter.
- Garnish with thinly sliced bell pepper and lemon twist.
- Bake at 350 degrees for about 1 hour.
- Serves 6.
