Coconut Cream Pie
- 3/4 c. sugar
- 1/3 c. all-purpose flour
- 1/4 tsp. salt
- 2 c. milk
- 3 slightly beaten egg yolks
- 2 Tbsp. butter or margarine
- 1 tsp. vanilla
- 1 c. flaked coconut
- 1 baked 9-inch pastry shell
- 1 recipe Meringue
- In saucepan, combine sugar, flour and salt.
- Gradually add milk, mixing well.
- Cook and stir over medium heat until mixture thickens and boils.
- Cook 2 minutes more.
- Remove from heat. Stir a small amount of hot mixture into egg yolks; immediately return to hot mixture in saucepan.
- Cook 2 minutes, stirring constantly.
- Remove from heat.
- Add butter or margarine, vanilla and coconut.
- Pour into cooled pastry shell.
- Spread with meringue.
- Bake in 350u0b0
- oven for 12 to 15 minutes.
- Cool.
