Salmon Sandwiches & Homemade Tartar Sauce

  1. Place fish in a greased baking pan and pour olive oil, soy sauce, and sherry over the top.
  2. Spread ginger over the top, then sprinkle with the seasonings.
  3. Cover with foil, and bake at 375 for 15-20 minutes until fish is cooked through.
  4. Place onions and pickles in a food processor, and finely chop.
  5. Transfer to a small bowl and add mayo, salt, and pepper.
  6. Spread sauce on both sides of a ciabatta roll (or bread of your choice).
  7. Top with the fish, lettuce, and sliced tomato.
