Buffalo Chili
- 3 slices bacon, cut into 1-inch pieces
- 1 large onion, minced
- 2 lb. buffalo, shredded or cut into very small pieces
- 3 cloves garlic, minced
- 1 green bell pepper, seeded and sliced
- 1 (16 oz.) can chopped tomatoes with liquid
- 2 (16 oz. each) cans red kidney beans with liquid
- 2 Tbsp. chili powder
- 1/2 tsp. each: ground cumin, salt and celery salt
- 1/4 tsp. each: hot pepper flakes and dried oregano
- 1 tsp. molasses
- 1 (6 oz.) can tomato paste
- In large heavy saucepan over medium heat, fry together bacon and onion, stirring occasionally, until tender, about 5 minutes. Add buffalo meat and brown over medium heat.
- Stir in all remaining ingredients.
- Simmer, uncovered, stirring occasionally, until buffalo is tender and flavors are blended, about 45 minutes.
