Company Spanish Rice
- 1/4 c. salad oil
- 2 garlic cloves, crushed
- 1/4 c. chopped celery
- 1 1/2 c. long grain rice
- 1 (No. 2) can tomatoes (2 1/2 c.)
- 1 (6 oz.) tomato paste (2/3 c.)
- 1 tsp. chili pepper
- 1 tsp. sugar
- 2 1/2 tsp. salt
- 1/2 bay leaf
- pinch of cayenne pepper
- 2 c. hot water
- 1 lb. ground beef
- 3/4 c. green pepper, chopped
- 1 large can beef bouillon
- Heat oil in large skillet.
- Add garlic, celery and beef; brown, stirring constantly.
- Mix rice, tomatoes, tomato paste, salt, bay leaf and cayenne pepper with hot water.
- Add to garlic and celery; stir well and cover.
- Bring to boil; reduce heat and add beef bouillon.
