Cranberry Salad Ring
- 4 (3 oz.) pkg. raspberry-flavored gelatin
- 2 c. boiling water
- 1/2 c. cold water
- 2 c. fresh cranberries, ground
- 2 oranges (unpeeled), seeded and ground
- 2 apples, unpeeled and ground
- 1 (15 1/4 oz.) can crushed pineapple (undrained)
- 2 c. sugar
- 1 c. pecans, slightly ground
- mayonnaise (optional)
- orange slices for garnish (optional)
- Dissolve gelatin in boiling water.
- Add cold water.
- Chill until consistency of unbeaten egg white.
- Combine next 6 ingredients and mix well.
- Fold fruit mixture into gelatin mixture.
- Pour into slightly oiled 10-cup ring mold.
- Chill until set.
- Unmold on lettuce leaves.
- Fill center of ring with mayonnaise and garnish with orange slices, if desired.
- Makes 20 servings.
