Caribbean Chicken

  1. Prepare seasoning; shake chicken in bag to coat with seasoning mixture.
  2. Heat oil in 10-inch nonstick skillet over medium-high heat until hot.
  3. Add chicken; stir-fry about 5 to 10 minutes.
  4. Stir in tomatoes, bell pepper, onion and garlic.
  5. Heat to boiling; reduce heat.
  6. Cover and simmer 4 to 6 minutes or until vegetables are crisp-tender.
  7. Serve chicken mixture over rice.
