Vanilla Chip Lemon Bars

  1. Heat oven to 350u0b0.
  2. In medium bowl, stir together 1 cup flour and 1/4 cup granulated sugar; with pastry blender, cut in margarine until mixture resembles coarse crumbs.
  3. Press mixture onto bottom of 9-inch square baking pan.
  4. Bake 15 minutes or until slightly browned.
  5. Remove from oven; sprinkle vanilla chips over crust.
  6. In medium bowl, stir together egg substitute, lemon juice, lemon peel, remaining 1/4 cup flour and remaining 3/4 cup sugar; carefully pour over chips and crust.
  7. Bake 15 minutes or until set.
  8. Cool slightly in pan on wire rack; sprinkle with powdered sugar.
  9. Cool completely.
  10. Cut into bars.
  11. Yield:
  12. About 3 dozen bars.
