Vanilla Chip Lemon Bars
- 1 1/4 c. all-purpose flour, divided
- 1 c. granulated sugar, divided
- 1/3 c. margarine, softened
- 3/4 c. Hershey's vanilla milk chips
- 1/2 c. frozen egg substitute, thawed
- 1/4 c. lemon juice
- 2 tsp. grated lemon peel
- powdered sugar
- Heat oven to 350u0b0.
- In medium bowl, stir together 1 cup flour and 1/4 cup granulated sugar; with pastry blender, cut in margarine until mixture resembles coarse crumbs.
- Press mixture onto bottom of 9-inch square baking pan.
- Bake 15 minutes or until slightly browned.
- Remove from oven; sprinkle vanilla chips over crust.
- In medium bowl, stir together egg substitute, lemon juice, lemon peel, remaining 1/4 cup flour and remaining 3/4 cup sugar; carefully pour over chips and crust.
- Bake 15 minutes or until set.
- Cool slightly in pan on wire rack; sprinkle with powdered sugar.
- Cool completely.
- Cut into bars.
- Yield:
- About 3 dozen bars.
