Pizza Rice Skillet
- 1 Tbsp. butter
- 1 1/2 c. shredded zucchini
- 1 large onion, chopped
- 2 c. boiling water
- 1 c. converted rice
- 3/4 tsp. Italian seasonings
- 3/4 c. pizza sauce or tomato sauce
- 12 slices salami or 3/4 c. cut up cooked chicken
- 1 (4 oz.) can mushroom stems and pieces, drained
- 1 (2.2 oz.) can sliced ripe olives, drained
- 1 to 1 1/2 c. shredded Mozzarella or Cheddar cheese
- In a 10-inch skillet, melt butter over medium-high heat.
- Add zucchini and onion and cook, stirring, until soft, about 5 minutes.
- Stir in boiling water, rice and Italian seasoning.
- Heat to boiling, reduce heat to low, cover and simmer about 20 minutes, until rice is almost tender.
- Spread pizza sauce evenly over rice, then arrange salami slices on top.
- Sprinkle with mushrooms, olives and cheese.
- Cover skillet and cook over medium heat about 5 minutes, until cheese is melted.
