Orange Honey Cake
- 2 large eggs
- 3/4 c. sugar
- 1/2 c. honey
- 3 Tbsp. vegetable oil
- 2 tsp. instant coffee granules
- 1/3 c. (3 oz.) frozen orange juice concentrate, thawed
- 1 3/4 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/8 tsp. salt
- Preheat oven to 300u0b0. Mix eggs, sugar, honey and vegetable oil with an electric mixer until blended. Dissolve coffee in 1/2 cup warm water. Mix into batter with orange juice. Mix in flour, baking powder, baking soda, cinnamon, allspice and salt. Mix for 1 minute or until smooth. Pour into greased 9 x 5 x 3-inch loaf pan. Bake 65 to 75 minutes or until toothpick inserted in center comes out clean. Remove to rack. Cool 10 minutes. Invert and cool completely. Makes 12 servings.
