Light Chocolate Cake
- 4 c. unsifted all-purpose flour
- 3 c. sugar
- 1 Tbsp. baking powder
- 2 tsp. salt
- 1 1/3 c. shortening
- 2 c. milk
- 6 eggs
- 2 tsp. vanilla
- 4 sq. (4 oz.) unsweetened chocolate, melted
- 1 c. finely chopped walnuts
- In large bowl of electric mixer, combine flour, sugar, baking powder, salt, shortening and 1 1/2 cups milk.
- Beat at medium speed on electric mixer for 2 minutes, or beat by hand for 300 vigorous strokes.
- Add remaining 1/2 cup milk, the eggs, vanilla and melted chocolate.
- Beat 2 minutes or 300 strokes.
- Stir in nuts.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake in a slow (325u0b0) oven one hour and 50 minutes or until cake tests done.
- Cool in pan 20 minutes, remove from pan and cool thoroughly on cake rack.
- Sprinkle with confectioners sugar.
