Better Turkey Burger With Feta And Onion Jam

  1. Place a large skillet over medium-low heat. Slice the onion into very thin slices and set aside.
  2. Heat olive oil in skillet and add paprika, cooking for 10 seconds until smokey and sweet smelling. Add onions and soy sauce then quickly stir to coat.
  3. Slowly sweat onions until translucent, about 10 minutes. Remove half of the onions and add to a large mixing bowl to cool.
  4. With the heat still on the remaining onions, stir in the splash of red wine and cook for another 10 minutes until very soft and jam-like. Set aside for finished burger.
  5. Preheat grill to medium-high heat. Return to your mixing bowl with cooled onions and add ground turkey, cumin, garlic powder, salt and pepper. Get your hands in there and mix (because it's fun!) then shape into 4 even sized patties.
  6. Grill turkey patties for about 4 minutes per side or until nice grill marks have appeared and the burger is medium-firm to the touch and cooked through.
  7. Toast brioche buns and slather one side with a bit of onion jam. Build burgers with a slice of feta, a bit of arugula, a tomato slice, and top with jam slathered bun. Enjoy!
