Pfeffernuesse
- 1/3 cup molasses
- 1/4 cup butter
- 2 cups flour
- 1/4 cup brown sugar
- 3/4 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ground cardamom
- 1/4 tsp ground allspice
- 1/8 tsp pepper
- 1 beaten egg
- Mix the butter and molasses in a saucepan and melt over low heat.
- Cool to room temperature.
- Stir together all dry ingredients in a large bowl; set aside.
- Stir the egg into the molasses mixture and gradually stir in the flour mixture.
- Cover and chill one hour or until dough is easy to handle.
- Divide dough into 12 portions. On a lightly floured surface roll each piece into a 10-inch rope. Cut the ropes into 1/2-inch pieces.
- Place the pieces 1/2-inch apart on ungreased cookie sheets.
- Bake at 350 for 10 to 12 minutes or until edges are firm and bottoms are lightly browned.
- Cool on paper towels.
