Lemon Vodka Meringue Pie
- 1/3 c. cornstarch
- 1 c. sugar
- 1/8 tsp. salt
- 1 1/2 c. warm water
- grated peel of 1 lemon
- 1/4 c. lemon juice
- 1/4 c. 80 proof vodka
- 4 eggs, separated
- 1 Tbsp. butter or margarine
- meringue topping
- 1 frozen 9-inch pie crust, thawed at room temperature
- Prick
- bottom
- of
- pie
- crust.
- Bake as directed for unfilled pie crust until golden brown.
- Combine cornstarch, sugar and salt in medium saucepan.
- Stir well.
- Stir in water, lemon peel,
- juice and vodka.
- Cook over medium heat, stirring until mixture
- boils. Remove
- from
- heat.
- Whisk
- eggs in small bowl until
- combined. Whisk
- in
- small
- amount
- of
- hot sauce, then slowly whisk
- eggs into sauce.
- Return to heat and cook, stirring until
- thick.
- Add butter to mixture and blend well.
- Pour into baked pie crust. Spread meringue topping over pie to edge of
- crust.
- Bake
- 10 minutes
- until
- meringue is golden brown. Remove from oven, cool on rack 15 minutes.
- Then refrigerate.
