Lemon Vodka Meringue Pie

  1. Prick
  2. bottom
  3. of
  4. pie
  5. crust.
  6. Bake as directed for unfilled pie crust until golden brown.
  7. Combine cornstarch, sugar and salt in medium saucepan.
  8. Stir well.
  9. Stir in water, lemon peel,
  10. juice and vodka.
  11. Cook over medium heat, stirring until mixture
  12. boils. Remove
  13. from
  14. heat.
  15. Whisk
  16. eggs in small bowl until
  17. combined. Whisk
  18. in
  19. small
  20. amount
  21. of
  22. hot sauce, then slowly whisk
  23. eggs into sauce.
  24. Return to heat and cook, stirring until
  25. thick.
  26. Add butter to mixture and blend well.
  27. Pour into baked pie crust. Spread meringue topping over pie to edge of
  28. crust.
  29. Bake
  30. 10 minutes
  31. until
  32. meringue is golden brown. Remove from oven, cool on rack 15 minutes.
  33. Then refrigerate.
