Eggnog Bread
- 2 1/4 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1/4 c. butter or margarine, melted
- 1 c. commercial eggnog
- 1/2 c. chopped candied cherries
- 1/2 c. raisins
- 1/2 c. chopped pecans
- Combine
- flour,
- baking
- powder
- and
- salt;
- set
- aside. Combine eggs,
- sugar
- and
- butter
- in a large mixing bowl; beat well.
- Add flour mixture alternately with eggnog, beginning and ending
- with
- flour
- mixture.
- Stir
- in
- remaining ingredients. Pour batter into
- a
- greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan.
- Bake
- at
- 350u0b0
- for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
- Cook in pan 10 minutes; remove to wire rack and cool bread completely.
- Yields 1 loaf.
