Peanut Butter Oatmeal Raisin Cookies

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.
  2. In a medium bowl, stir together peanut butter, oats, egg, baking soda, brown sugar, maple syrup, cinnamon, and raisins until well combined.
  3. Using a regular sized ice cream scoop, scoop batter onto prepared cookie sheet.
  4. Bake for about 15 minutes, until golden brown and set on top. Cool completely on the sheet or serve warm. Cookies may be stored in an airtight container at room temperature for up to 3 days or frozen, wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature about an hour or in the microwave about 30 seconds.
