Steamed Vegetable Platter(Serves 4)
- 6 garlic cloves, peeled and minced
- 2 tsp. reduced-sodium soy sauce
- 2 tsp. freshly squeezed lemon juice
- 1/4 tsp. freshly ground black pepper
- 3 Tbsp. vegetable oil
- 1 1/2 tsp. curry powder
- 1 large or 2 small onions, finely sliced
- 3 Tbsp. chicken broth or water
- 1 head savoy cabbage (about 2 lb.), finely shredded
- 1/3 c. toasted peanuts
- In a 12-inch skillet, heat the oil and stir in the curry powder until blended.
- Add the onions; when it's sizzling, add the broth and cabbage.
- Cook over medium heat, stirring, until slightly wilted, about 2 minutes.
- Add more liquid if needed. Cover and cook, stirring occasionally, an additional 6 minutes, until tender-crisp.
- Sprinkle with peanuts and serve.
