Cheesy Bruschetta Chicken
- Chicken Breasts
- 6 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Mrs. Dash chicken seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 8 ounces whole milk mozzarella cheese block, sliced
- Bruschetta
- 4 small tomatoes, finely chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 10 basil leaves, finely chopped
- Heat a large skillet over medium heat, and add olive oil and chicken.
- Sprinkle half of the spices over the chicken evenly, and cook for about 4 minutes.
- Flip the chicken over once it's golden and add the other half of the seasonings.
- Cook until the chicken is cooked through, then transfer to a baking dish.
- Place sliced cheese generously over each piece of chicken.
- Bake at 375* for 5 minutes, then broil for an additional 3 minutes to melt the cheese.
- Place chicken on a plate and spoon the bruschetta over the top.rn**Drizzle balsamic glaze over the top for a nice finishing touch.**
