Sweet 'N Sour Chicken

  1. Drain pineapple, reserving juice.
  2. In large skillet, heat corn oil over medium heat.
  3. Add next 3 ingredients; stir-fry 2 minutes or until tender-crisp.
  4. Remove and stir-fry chicken approximately 3 minutes.
  5. In bowl, stir together pineapple juice and remaining 5 ingredients.
  6. Pour over chicken.
  7. Add green pepper mixture and pineapple.
  8. Stirring constantly, bring to a boil over medium heat. Cook for 1 minute.
  9. Serve over rice.
  10. Serves 4 to 6.
