Veggie-Pasta Salad
- 3 green onions, chopped
- 8 stalks celery, chopped
- 3 oz. raw broccoli, chopped
- 8 oz. fresh mushrooms, sliced
- 16 cherry tomatoes, sliced in half
- 1 green pepper or 8 oz. cauliflower, chopped
- 1 small can (4 oz.) sliced black olives
- 4 garlic cloves
- 3 Tbsp. olive oil
- 1 Tbsp. Italian seasonings
- 1 tsp. salt or salt substitute
- 1/2 lb. mixed vegetable rotini
- 1/2 lb. tortellini
- 1 pt. creamy garlic salad dressing
- 1 c. freshly grated Parmesan cheese
- Mix together the onions, celery, broccoli, mushrooms, tomatoes, pepper, olives and garlic.
- Add the olive oil and seasonings to mixture and toss; set aside.
