Lo-Cal Beef Stroganoff(Diabetic Recipe)

  1. Heat butter and oil in heavy skillet.
  2. Saute meat and onion until meat loses its redness.
  3. Mix the bouillon cube and cornstarch in water.
  4. Add this mixture and remaining ingredients, except yogurt, to the meat and simmer about 1 hour until meat is tender. Stir in yogurt and heat thoroughly.
  5. Serve over hot rice, if desired.
  6. Makes 4 (3/4 cup) servings.
  7. Each serving equals 1/2 low-fat milk, 3 lean meat and 2 fat exchanges.
  8. Each serving contains 285 calories.
