Creamy Instant Pot Coconut Red Lentils

  1. Chop, mince, rinse & prepare all of your ingredients
  2. Add oil to the bottom of your pressure cooker and put it on saute mode
  3. Saute your onions and ginger for 2 minutes
  4. Add the garlic, turmeric and veggie bouillon paste and saute for another minute
  5. Add the lentils, 4 cups of water, coconut milk, kale, tomatoes and carrots.
  6. Put lid on and pressure cook for 20 minutes.
  7. Prepare some rice on the stove or in a rice cooker
  8. Quick release the lentils once the 20 minutes is done
  9. Add the 1/2 cup of water, lime juice and cilantro
  10. Serve over rice
