Rocket Salad With Prosciutto And Figs (Insalata Di Prosciutto, Rucola E Fichi)
- 50 grams rocket, washed and dried
- 30 milliliters extra virgin olive oil
- 10 milliliters balsamic vinegar
- 4 very ripe figs, washed and sliced into four pieces
- 8 pieces prosciutto, thinly sliced with a silky feel
- sea salt
- Black pepper, freshly ground
- crusty white bread to serve
- Just before serving, in a bowl, toss the rocket with salt, pepper, olive oil, and balsamic vinegar. (If you do this too far in advance, the acid in the vinegar will cook the rocket leaving you with a limp, mushy, unpalatable mess.)
- Place the rocket onto four plates and place six pieces of fig on top. Drape 2 pieces of prosciutto over top of each plate and serve with nice crusty bread.
