Mincemeat(Makes One 8-Inch Pie)
- 1 c. ground beef or turkey
- 2 c. chopped apples
- 1 c. golden raisins
- 1/6 c. cider or apple juice
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/2 c. plus 1 Tbsp. sugar
- Break meat up and cook slowly in a little oil.
- Do not brown. Put meat and apples in food processor and grind a bit.
- Return to pan.
- Add remaining ingredients. Bring slowly to a boil.
- Turn down heat.
- Cover and simmer for 30 minutes.
- Cool.
- Store in fridge for 2 or 3 days to age, if possible.
- Then place in 8-inch unbaked pie shell.
- Top with other crust, solid or cut in strips and crisscrossed.
- Add a little brandy to taste if you wish.
- Bake in a 425u0b0 oven for 10 minutes and lower heat to 350u0b0 for 30 minutes more.
