Green Tomato Pie
- pastry for a double-crust 9-inch pie
- 2 Tbsp. orange marmalade
- 1/2 c. firmly packed light brown sugar
- 1/4 c. granulated sugar
- 1/4 c. quick cooking tapioca
- 1/2 c. golden raisins
- 1 Tbsp. grated orange zest
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. salt
- 4 medium green tomatoes, thinly sliced
- 2 Granny Smith apples, cored, peeled and sliced
- 2 Tbsp. cold unsalted butter or margarine, cut in pieces
- Preheat oven
- to
- 425u0b0. Divide the pastry in half, roll out 1/2 and place in a
- 9-inch pie plate, leaving about 1-inch overhang.
- Brush marmalade evenly
- over
- the bottom. Set other piece of pastry aside.
