A.H.N. Silver Coffee Spinach Sandwich

  1. The night before, open packages of spinach and let drain overnight.
  2. Squeeze all liquid out with your hands the next morning.
  3. Re-chop to eliminate stringy spinach.
  4. Stir sour cream, mayonnaise, Salad Supreme, salt and pepper together.
  5. Add spinach and mix thoroughly.
  6. Refrigerate overnight.
  7. Cut crusts from bread and flatten with rolling pin.
  8. Spread slice of bread with spinach mixture; top with another piece of bread.
  9. Sprinkle with parsley. Cut each bread sandwich into 4 pieces before serving.
