Grandma'S Upside-Down Cake

  1. Drain pineapple, reserving 2 tablespoons syrup.
  2. Melt butter in a heavy 10-inch skillet.
  3. Stir in brown sugar and the 2 tablespoons pineapple syrup.
  4. Blend thoroughly.
  5. Remove from heat. Arrange pineapple slices in sugar mixture.
  6. Place a maraschino cherry in center of each slice.
  7. Combine flour, sugar, baking powder and salt in a large bowl.
  8. Add milk and shortening; beat at high speed with electric mixer 2 minutes.
  9. Add egg, lemon rind, lemon juice and vanilla.
  10. Beat another 2 minutes.
  11. Pour over pineapple in skillet, spreading evenly.
  12. Bake in a moderate oven (350u0b0) for 40 minutes.
  13. Cool on wire rack 5 minutes.
  14. Invert onto serving plate.
  15. Serve warm.
