Vegetarian Rice Casserole
- 1 large onion
- 2 green peppers
- 4 to 6 stalks celery
- 3 tomatoes
- 1 (10 oz.) can tomato sauce
- red cayenne pepper (optional)
- basil
- olive or vegetable oil
- 1 c. Cheddar cheese, shredded or sliced thinly
- Chop the following vegetables in large chunks:
- onion, green peppers, celery and tomatoes.
- In vegetable oil or olive oil, lightly brown onions and add green peppers and celery.
- Simmer and add tomatoes.
- Sprinkle a bit of red cayenne pepper and basil over simmering mixture.
- Cover and cook down until tender.
- Add tomato sauce.
- If mixture requires more liquid, add water.
- Stir in long grain brown rice and simmer 45 to 55 minutes.
- Pour into casserole dish and top with Cheddar cheese.
- Broil until bubbly and serve.
