Red Shiso And Scallion Microgreens Tapenade
- 4 cloves of garlic
- 2 cups red Shiso
- 1 cup scallion microgreens
- 1 cup parmesan cheese
- 1 cup olive oil
- 1 tablespoon sesame oil
- Juice from 1/2 a lemon
- 1/2 lemon rind
- kosher salt
- fresh cracked pepperv
- 1 Whole grain bread
- Crush the garlic in your food processor
- Add your de-stemmed shiso leaves and scallion microgreens
- Give them a few pulses in the blender..careful not to over blend or it will become pasty
- Add 1/2 half the grated parmesan cheese, the lemon rind, sesame oil and olive oil and give it a quick whizz
- Add the remaining parmesan cheese, lemon juice and salt and pepper to taste
- Bread: Heat a non stick pan on high
- Cut thick slices of whole grain bread
- Add olive oil to the hot pan
- Lay the brown bread on pan and brown on each side for 2 minutes
- Serving suggestions: spread tapenade on the toast and top with speck or prosciuto or even goats cheese
