Lamb Burgers With Goat Cheese Spread
- Goat Cheese Spread
- 4 ounces goat cheese, room temperature
- 1/4 cup sour cream
- juice of a 1/2 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Lamb Burgers
- 1 pound ground lamb
- 8 ounces crimini mushrooms, cleaned, stems removed and finely chopped in a food processor
- 1 small onion, grated
- 1/2 cup chopped parsley
- 2 cloves of garlic, minced
- 1/2 tablespoon ground coriander
- 3 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1 medium red chile, finely chopped (alternatively 1/4 teaspoon cayenne pepper)
- 6 hamburger buns (preferably brioche)

- In a food processor, combine goat cheese, sour cream, lemon juice, salt, pepper, and olive oil. Process until smooth. Place in a small container with a lid and refrigerate until ready to use.
- In a large bowl combine lamb, chopped mushrooms, onions, parsley, garlic, salt, pepper spices, and chopped chile (or cayenne). With a fork, rake all the ingredients together until well combined. This method keeps the burgers from becoming to dense.
- Heat the grill over medium-high heat.
- Oil the grates and then place the burgers on the grill and cook for 6-8 minutes on each side.
- Toast the buns a couple minutes on the grill.
- Place a burger on the bottom of the brioche bun, then top with the goat cheese spread and some arugula, top with the bun and serve!
