Good Luck Black-Eyed Pea Soup(Men Love It!)
- 1 lb. black-eyed peas
- 6 slices bacon
- 2 c. chopped onion (approximately 1 onion weighing 1/2 lb.)
- vegetable oil (if needed)
- 1 Tbsp. all-purpose flour
- 1 (14 1/2 oz.) can undrained whole tomatoes (Contadina preferred)
- 2 gloves garlic, pressed or finely minced
- 1 tsp. Worcestershire sauce
- 1/4 tsp. Tabasco
- 1 1/2 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 1 tsp. Knorr Swiss Aromat all-purpose seasoning (optional-add more salt if not using)
- 1 Tbsp. white wine vinegar (optional, but adds zest)
- 1 1/2 tsp. liquid smoke
- Rinse peas.
- Place in large soup kettle and cover with water. Place lid on kettle and bring to a boil.
- Reduce heat to medium and simmer 2 minutes.
- Set aside, tightly covered, for a minimum of 1 hour.
- Can leave for 3 to 4 hours.
