Cheese & Herb Focaccia
- Dough
- 12 ounces lukewarm water
- 2-3 tablespoons olive oil
- 2 teaspoons salt
- 2 teaspoons organic sugar
- 4 cups bread flour (or all purpose)
- 1 teaspoon Italian seasoning
- 1 teaspoon Weber roasted garlic & herb
- 2 teaspoons active dry yeast
- Focaccia Topping
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2-3/4 cups fresh Parmesan cheese
- 10 finely chopped fresh basil leaves
- 2-3 teaspoons organic cornmeal
- Using a stand mixer add the ingredients in order.
- Turn on to setting number two, and mix for 8 minutes.
- After 8 minutes, remove the dough, spray the bowl with cooking spray, and place the smoothed out dough back in the mixing bowl.
- Cover with plastic wrap and allow it to rise for one hour.
- Spray an 11x17 baking sheet with cooking spray and sprinkle the cornmeal over it evenly.
- Pull out the dough carefully and stretch it in the air, then press it evenly on the baking sheet.
- Dip your fingertip in olive oil and press indentations all over the dough in rows.
- Using a pastry brush, evenly spread the olive oil on the dough.
- Sprinkle the salt evenly, then the Parmesan cheese and fresh basil.
- Bake at 425* for 15-17 minutes until golden, crispy, and the cheese is melted.
