Cheese & Herb Focaccia

  1. Using a stand mixer add the ingredients in order.
  2. Turn on to setting number two, and mix for 8 minutes.
  3. After 8 minutes, remove the dough, spray the bowl with cooking spray, and place the smoothed out dough back in the mixing bowl.
  4. Cover with plastic wrap and allow it to rise for one hour.
  5. Spray an 11x17 baking sheet with cooking spray and sprinkle the cornmeal over it evenly.
  6. Pull out the dough carefully and stretch it in the air, then press it evenly on the baking sheet.
  7. Dip your fingertip in olive oil and press indentations all over the dough in rows.
  8. Using a pastry brush, evenly spread the olive oil on the dough.
  9. Sprinkle the salt evenly, then the Parmesan cheese and fresh basil.
  10. Bake at 425* for 15-17 minutes until golden, crispy, and the cheese is melted.
