Grilled Banana Bread French Toast

  1. Preheat oven to 350F.
  2. Line a loaf pan with parchment paper; set aside.
  3. Mash bananas and whisk all wet ingredients together.
  4. Whisk dry ingredients into wet, stirring just until combined.
  5. Pour into loaf pan and bake for 1 hour or until top golden and cracked and an inserted toothpick comes out mostly clean.
  6. Let cool on an iron rack fully before slicing into 9 to 12 slices.
  7. Light your grill or preheat grill pan.
  8. In a shallow bowl or dish, whisk all ingredients together. Dip cooled banana bread slices into the mixture, coating well.
  9. Oil grates or pan with coconut oil, and cook until grill marks form, about 2 min, and flip and repeat on other side for 2 min. Slice and grill pears if desired.
  10. Serve Banana Bread French Toast with optional grilled pears and honey.
