Skeeter'S Pie Crust
- 1 1/2 c. flour
- 1 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/2 c. salad oil
- 2 Tbsp. cold milk
- 1 c. grated carrots (about 2 medium)
- 2 c. chopped dates
- 2 c. raisins
- 2 2/3 c. water
- 1/2 c. butter (1 stick)
- 2 tsp. each: ground cinnamon, cloves and nutmeg
- 4 c. plain whole wheat or unbleached flour
- 3 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. chopped black walnuts, English walnuts or pecans
- 2 tsp. vanilla flavoring
- Place the first 8 ingredients in a large pan and bring slowly to a boil for 5 minutes.
- Cool completely.
- Stir together the flour, baking powder, baking soda, salt and nuts.
- Add dry ingredients to wet and stir to blend.
- Stir in vanilla flavoring. Pour into greased and floured large Bundt pan.
- Bake at 350u0b0 for 1 hour.
- Frost with cream cheese and honey mixture, if desired.
