Broccoli With Minced Ham(Serving Size: 2)

  1. Wash broccoli in lightly salted water.
  2. Drain and cut off 2-inches from broccoli stems; peel the cut-off stems.
  3. Slice them lengthwise, 1/4-inch thick.
  4. Separate the florets with stems from the large stems.
  5. Cook broccoli and stems in boiling, salted water for 2 minutes, then drain.
  6. Heat oil in wok or skillet; add broccoli and stems.
  7. Stir-fry for 1 minute.
  8. Add salt, sugar and chicken broth.
  9. Mix and bring to boil.
  10. Turn the heat to medium and cook until broccoli is tender, but not mushy.
  11. Mix cornstarch with 3 tablespoons cold water and pour over broccoli.
  12. Add chopped ham and mix gently.
