Eclairs With Chocolate Frosting

• 1 recipe Creme Puffs
• 3 pkg. vanilla regular pudding
• 6 c. milk
• rum flavoring
• 3 sq. unsweetened chocolate
• 2 c. sifted confectioners sugar
• 3 Tbsp. hot water
• 1 egg
• 1/3 c. margarine
• 1 tsp. vanilla

1. Cook pudding in microwave according to package directions; add 2 tablespoons rum flavoring and cool in refrigerator.
2. When cold, put in horizontally sliced creme puffs, 1/2 cup per puff.
3. Spread chocolate frosting on tip and refrigerate until ready to serve. To make frosting, melt chocolate in mixing bowl over hot water. Add sugar and water to chocolate and blend.
4. Add egg, then margarine and vanilla.
5. Mix on high speed in bowl of ice water until of spreading consistency.
