Lasagne Sausage Casserole
- 1 lb. sausage links, cut in 1-inch pieces
- 3/4 c. chopped onions
- 1 clove garlic, minced
- 3 c. tomato juice
- 1 (6 oz.) can tomato paste
- 1/2 c. water
- 1/2 tsp. sugar
- 1 bay leaf
- 1 (12 oz.) carton cottage cheese
- 1 egg, beaten
- 1/2 c. Parmesan cheese, divided
- 2 c. Mozzarella cheese, divided
- salt and pepper to taste
- 1/2 (6 oz.) pkg. lasagne noodles
- Brown sausage over low heat in a heavy skillet; drain sausage on paper towels.
- Reserve 1/4 cup drippings.
- Saute onion and garlic in drippings until crisp.
- Return sausage to skillet.
- Stir in tomato juice, tomato sauce, sugar, salt and bay leaf.
- Simmer, uncovered, for 1 hour.
- Discard bay leaf.
- Combine cottage cheese, egg, 1/4 cup Parmesan cheese, salt and pepper; set aside.
- Cook noodles; drain.
- Spread about 1 tablespoon cheese mixture on each noodle.
- Roll each noodle, jelly roll style, beginning at narrow end.
- Spread 1 cup sausage sauce in a 13 x 9 x 2-inch baking dish. Arrange rolls, seam side down, in sauce.
- Spoon with remaining Mozzarella and Parmesan cheeses.
- Bake at 350u0b0 for 30 to 40 minutes.
- Makes 8 servings.
