Lasagne Sausage Casserole

  1. Brown sausage over low heat in a heavy skillet; drain sausage on paper towels.
  2. Reserve 1/4 cup drippings.
  3. Saute onion and garlic in drippings until crisp.
  4. Return sausage to skillet.
  5. Stir in tomato juice, tomato sauce, sugar, salt and bay leaf.
  6. Simmer, uncovered, for 1 hour.
  7. Discard bay leaf.
  8. Combine cottage cheese, egg, 1/4 cup Parmesan cheese, salt and pepper; set aside.
  9. Cook noodles; drain.
  10. Spread about 1 tablespoon cheese mixture on each noodle.
  11. Roll each noodle, jelly roll style, beginning at narrow end.
  12. Spread 1 cup sausage sauce in a 13 x 9 x 2-inch baking dish. Arrange rolls, seam side down, in sauce.
  13. Spoon with remaining Mozzarella and Parmesan cheeses.
  14. Bake at 350u0b0 for 30 to 40 minutes.
  15. Makes 8 servings.
