Coconut Macaroon Cookies

  1. Preheat oven to 375u0b0.
  2. Combine cookie mix with butter packet that comes with the mix, 1 egg white, coconut flavoring and 1/2 cup of coconut in a large bowl.
  3. Stir until blended.
  4. Shape dough into 1-inch balls.
  5. Dip balls into remaining egg white.
  6. Roll in remaining coconut.
  7. Place on an ungreased baking sheet (can line with waxed paper to keep bottom from browning too fast).
  8. Press candied cherry half into center of each cookie.
  9. Bake at 375u0b0 for 8 minutes, or until coconut is light golden brown.
  10. Cool 1 minute on baking sheet.
  11. Remove to cooling rack.
  12. Makes 2 1/2 dozen.
