Chunky Peanut Brittle
- 1 (12 oz.) pkg. peanut butter pieces
- 1 3/4 c. sugar
- 3 Tbsp. water
- 1 (6 oz.) pkg. semi-sweet chocolate pieces
- 3 sticks margarine
- 3 Tbsp. white corn syrup
- 1 (12 oz.) can salted peanuts, chopped
- Line a large cookie sheet with aluminum foil and spray lightly with Pam. Sprinkle with 1 cup of peanut butter pieces. In a heavy 2-quart pan, heat sugar, syrup, oleo and water to boiling. Cook to 300u0b0 (to a hard-crack) over medium heat. Remove from heat and stir in chopped peanuts. Pour immediately onto cookie sheet and spread over the entire area. Sprinkle with chocolate pieces and remaining peanut butter pieces. When they have melted enough, spread over entire pan with a knife, covering all edges carefully. Cool until hard and break into small pieces.
