Alison'S Award Winning Chili
- 3 large onions, chopped
- 1/2 lb. salt pork
- 1 (16 oz.) can diced tomatoes
- 1 (14.5 oz.) can stewed tomatoes
- 2 (15 oz.) cans dark red kidney beans, drained and rinsed
- 1 can Hunt's chunky chili sauce
- 1 can Hunt's chunky special sauce
- 1 can Hunt's chunky Mexican sauce
- 1 1/2 lb. ground chuck
- 1 1/2 lb. ground sirloin
- 1 (28 oz.) can kitchen-ready tomatoes
- 1 small can green chilis (mild or hot)
- 1/4 c. (about) sliced hot jalapenos
- 1 pkg. Old El Paso chili seasoning mix
- 1 Tbsp. or so curry
- 1 Tbsp. or so cumin
- 1 Tbsp. or so Tabasco
- 1 Tbsp. or so garlic powder
- Cut up salt pork and brown in oil in a large skillet.
- When pork is about half cooked, add onions.
- When salt pork is completely cooked, put in the rest of the ingredients, except spices, and mix well.
- Add spices (they weren't measured as they went in, but I'd guess that this is in the multiple tablespoon range) and cook on low for an hour or two.
