So Good Snickerdoodles
- 1 c. Smart Beat margarine
- 2 1/2 c. powdered sugar
- 1 Tbsp. vanilla
- 2 tsp. almond extract
- 2 Egg Beaters
- 2 1/2 to 3 c. self-rising flour
- 3 Tbsp. granulated sugar
- 1 Tbsp. cinnamon
- Cream together Smart Beat, powdered sugar, vanilla, almond extract and Egg Beaters until smooth.
- Add flour and blend thoroughly.
- Chill dough 1 hour.
- On a small plate, mix together the granulated sugar and cinnamon.
- Drop dough by spoonful into the cinnamon-sugar mixture.
- The dough will be very sticky. Sprinkle cinnamon-sugar mixture over dough until it is coated enough.
- Next, place the coated balls on a cookie sheet that has been sprayed with Pam.
- Bake at 375u0b0 for 8 to 10 minutes.
- Yields about 5 dozen cookies.
