Smokin' Chicken Noodle

  1. In a stock pot, heat olive oil and saute (sweat) vegetables, stirring for about 2 minutes. Add sausage link (casing removed), and cook meat until lightly browned.
  2. Add 3 quarts of water to the stock pot ( 1 quart of prepared chicken stock may be substituted for a quart of the water.) Add chicken pieces, paprika, garlic, dried peppers. Simmer over low heat for 2 hours or longer.
  3. With a slotted spoon, remove chicken pieces and bones from the stock. Cut chicken into small pieces and reserve.
  4. Turn heat up on soup, add noodles and cook until noodles are tender. Add chicken pieces back into pot. Get out a ladle. . . get ready to serve. Hot!
