Tamale Pie
- 1 lb. ground chuck
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small jar pimento
- 1/2 medium green pepper, chopped
- 1 (4 oz.) can sliced mushrooms, drained
- 2 (8 oz.) cans tomato sauce
- 1/4 c. water
- 1 Tbsp. chili powder
- dash of crushed red pepper or hot pepper sauce (if desired)
- salt and pepper to taste
- 1 Tbsp. flour
- 2 Tbsp. hot water
- 1 can pitted black ripe olives, halved
- 2 c. grated Cheddar cheese
- 2 c. corn chips, lightly crushed
- Brown ground chuck; add onion, garlic, pimento, green pepper, mushrooms, tomato sauce, water, chili powder and red pepper or hot pepper sauce.
- Simmer for 20 minutes.
- Add salt and pepper to taste.
- Make a paste of the flour and water.
- Stir into meat mixture.
- Add ripe olives.
- Cook over low heat until it comes to a boil.
- Season to taste.
- Layer mixture, grated cheese and crushed chips into a 2 1/2-quart baking dish.
- Top with chips.
- Bake at 350u0b0 for approximately 30 minutes until hot clear through.
