Sweet Potato Sausage Stuffing

  1. Peel, slice and boil the sweet potatoes until just tender. Mash them well.
  2. There should be about 6 cups.
  3. Fry the sausage until done, breaking it up with a fork as it cooks.
  4. Remove the sausage.
  5. Saute the onions and celery in the drippings.
  6. Place the mashed sweet potatoes, sausage, celery, onions and drippings in a large bowl.
  7. Add the bread crumbs, raisins, parsley, thyme, sage, salt and pepper to taste.
  8. Stir gently until well mixed.
  9. Add apples (optional).
  10. Use more sweet potatoes or less bread crumbs. Add the nutmeg and mace when using the pecans (optional) or the pecans and apples together.
