Strawberry Oatmeal Muffins
- 3/4 c. sugar
- 1/3 c. margarine
- 2 eggs
- 1/4 c. skim milk
- 1/2 c. applesauce
- 1 Tbsp. lemon juice
- 1 tsp. grated lemon peel
- 2 c. whole wheat flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 c. raw quick-cooking oats
- 1 c. strawberries
- 1/2 c. raisins (optional)
- Preheat oven to 375u0b0.
- Cream together sugar and margarine. Mix in eggs, milk, applesauce, lemon juice and lemon peel.
- In another bowl, sift together flour, baking powder and salt, then mix in oats.
- Slowly add dry ingredients to wet ingredients, mixing well by hand.
- Coarsely chop strawberries and add to mixture.
- Pour in muffin pans lined with paper cups.
- Bake 20 minutes or until done.
- Makes 20 muffins.
