Guiltless Scones
- 1 1/4 c. wheat flour
- 1 c. white flour
- 3 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 c. natural applesauce
- 1/2 c. honey
- 1 egg white (no yolk!)
- 1 c. raisins (baking raisins are preferred)
- 1 small apple, peeled and diced (optional)
- 4 to 5 Tbsp. fat-free or low-fat plain or vanilla yogurt
- Preheat oven to 425u0b0.
- Combine first four ingredients in a large mixing bowl.
- Cut in applesauce; cut until crumbly.
- Add honey, egg white and vanilla and mix.
- Add fruit and mix. Gradually add 1 tablespoon a time, the yogurt, mixing thoroughly after each addition.
- Dough should be lumpy and cling to bowl and spoon.
- Place dough on greased cookie sheet, forming each scone similar to that of a biscuit, round, about 3 to 4-inches in diameter.
- Cook until golden brown.
- Scones will have a muffin texture.
- Makes 8 to 10 scones.
