Inside-Out Ravioli
- 2 lb. Italian sausage or turkey sausage
- 1 chopped onion
- 1 clove garlic or more per taste
- 2 (10 oz.) pkg. frozen spinach, thawed, drained and chopped (fresh can be used)
- 1 (2 lb.) jar spaghetti sauce (can be homemade)
- 1 (16 oz.) jar tomato sauce
- 12 oz. tomato paste
- 1 lb. shell pasta, cooked and drained
- 6 to 8 oz. shredded Cheddar cheese
- 1 c. bread crumbs
- 3 beaten eggs
- 1/2 c. salad oil
- Brown the first 3 ingredients.
- Drain frozen spinach and save liquid.
- Combine spinach, tomato sauce, spaghetti sauce and tomato paste.
- Add 1/2 cup liquid from spinach.
- Simmer for 10 minutes. Add spinach mixture, pasta, cheese, bread crumbs, eggs and salad oil.
- Spread pasta mixture into a 9 x 13-inch pan.
- Top with meat sauce.
- (Sometimes there is too much for 1 pan.
- I put extra in an 8 x 8-inch pan and freeze.)
- Bake at 350u0b0 for 1 hour.
